I made some zucchini jam this week,well maybe you could call it a spread or marmalade,well whatever you want to call it ,it is pretty good and easy to make.you know zucchini doesn't have much of a taste if any,so you have to add stuff to make it taste good. I had a few extra zucchini, so I thought I would make me a batch..so I did..
RECIPE
6 cups grated zucchini
1 cup water..boil 6 minutes..
add:
6 cups sugar,1-(20 oz)can well drained crushed pineapple,
2 tbsp.lemon juice..boil 6 minutes.
add:
1-(3 oz)box apricot jello,boil 6 minutes.
pour into hot jars,seal immediately..
..NOTE..this does not jell...but it is really thick..makes 5 and 1/2 pints.
I use this with ham and pork chops..
this is a first! I guess the pineapple and apricot jello helps out with the taste. Hope you enjoy it. It looks good. whenever I need to grate squash I put it in my mini black and decker chopper, it works really good and it's so easy.
ReplyDeleteI've never heard of zuccini jam. I think this might be the perfect way to use up all the "extra". Doesn't EVERYONE have extra zuccini?? I don't even grow it, and I have "extra"...LOL.
